Coleslaw is one of my to go salad for my husband that loves it more then I do. Coleslaw is a classic recipe and a delicious homemade coleslaw recipe is a must have in every kitchen. That is why I wanted to do the lemon and tomato coleslaw salad. You can find coleslaw at almost every party or gathering in the spring or summer time especially in cook outs.
Usually in our house hold we don’t have to wait till the spring or summer time to make coleslaw. So one day I was watching some one do a coleslaw a little different and I thought to myself wow my husband would love to try something like this but what I didn’t know was that my husband makes something like it for his black bean coleslaw. So I decided to tweak the coleslaw salad myself.

Lemon and Tomato Coleslaw Salad
This lemon and tomato coleslaw salad is very easy to prepare and you can prepare it a day before to get more taste. With this recipe you don’t need mayonnaise nor red vinegar.

How to Start and Prep
So first I prep, making sure that I have all of my condiments and what I need.

- Trio Peppers – 1 green , 1 red , 1 yellow
- Bag of coleslaw
- Grape tomato
- Fresh Cilantro
- Basil
- Oregano
- Celery
- Cucumber
- Dry & Fresh Parsley
- Fresh Thyme
- Olive Oil
- Lemon or Lemon Juice
- Ground Garlic
- Salt & Pepper

Making sure that I have everything that I need then I start by washing and cutting half of the peppers. (As that this was only for my husband and I, I decided to make less). For this one it made about 6-8 servings depending how much you eat.

Step Two
For this step I add
- Need 1tps of dry parsley
- 1tps of dry oregano
- 1tps of basil
- 1tsp of garlic powder
- 1/2tbls of salt & Pepper (to your taste)


Step Three
For This Step:
I added on top of the seasonings:
- About 6-8 grape tomato cut in 1/2
- 1/2 a cucumber
- 1/2 cup of fresh cilantro
- 1tbs of Thyme
- 1 cup of coleslaw
- 1tbls of olive oil
- 1 squeezed lemon juice from a lemon

After you added everything you only need to mix all of it together. I used a metal bowl which are great when you mix and put it in the fridge. Remember to add the salt and olive oil to your tasting. It came out perfect then I put it in the fridge until the food was ready to be served.
What is good with this salad is that you can make it for steak or beef tacos , even with steak, or pork chops.
Now remember that you can add more if you are making it for a get together. You can also not add the lemon juice and olive oil till you are ready to serve it.
